PEANUT BUTTER AND CHIPOTLE HUMMUS

 

3 to 4 cloves garlic

• 2 cups canned garbanzo beans

• 1/2 cup chopped roasted red peppers

• 1/4 cup apple cider vinegar

• 1/2 cup smooth peanut butter

• 1 minced chipotle chile plus 1 Tbsp. sauce (from a can of chipotle chiles in adobo sauce)

• 1/2 teaspoon chipotle chile powder (regular chili powder may be substituted)

• 1/4 cup olive oil

• Salt to taste

 

1. With the food processor running, drop the cloves of garlic through the feed tube, and process

until finely minced.

2. Add the garbanzo beans, red peppers and vinegar; pulse a few times to mix ingredients.

Scrape down the sides of the bowl, and continue processing until puréed. If very thick, add a

tablespoon or so of water to thin.

3. Add peanut butter, chipotle chile, adobo sauce and chile powder; pulse until wellcombined.

With the machine running, add the oil in a slow, steady stream. Season to taste with

salt.
